Punjabi Channa & Kaali Daal Masala by Vandana Malhotra
This spice blend ushers in the taste of Multan. 61 year old Vandana Malhotra's answer to food for the soul. Lentils, pulses, cottage cheese and chickpeas cooked in clarified butter and her special age old family spice blend. It can also be used as seasoning on yogurt.
Key Ingredients - Amchur, Salt, Grated Tomato, Ajwain, Red Chillies, Coriander.
Recipe - Soak chickpeas or a combination of lentils with rajma (Kaali Dal). Heat clarified butter, chopped onions, garlic, ginger and the Punjabi Chana & Kaali Dal Masala. Add extra coriander, amchur and red chili powder, if required. Add salt and grated tomato. Cool till oil separates. Then add boiled chickpeas or lentils. This spice blend can also be used as seasoning for dahi wada and grilled cottage cheese or grilled meats. In addition, it can be filled in bitter gourd and okra.
